Fiesta Corn - Dress up dull buttered corn by turning it into a festive side dish. Just add diced sweet red and green bell pepper, onion, and jalapeno. Sprinkle in some garlic and sugar. Squeeze in some lime juice. After warming up top with fresh chopped cilantro.
Jalapeno Cheddar Cornbread - Finely chop jalapeno in a food processor. One jalapeno for every 8-10 rolls. It's just enough for a surprise subtle flavor. Add the pepper mixture along with shredded cheddar cheese to your cornbread or biscuit recipe.
Cinnamon Whipped Cream - Add cinnamon, a favorite Mexican flavor, to your whipped cream before topping off your pumpkin pie.
Chorizo Stuffing - This is amazing! Add spicy Mexican Chorizo sausage to stuffing. Just remove from the casing, crumble and brown before adding it to your favorite stuffing recipe. Or, "doctor up" instant stuffing with chorizo. It will taste so good that no one will know the stuffing is from a box! Unless you are using a lean variety of chorizo from a health food market there is no need for olive oil. There is enough fat in the sausage to to brown it.
What is Chorizo? It is a flavorful Mexican hot sausage made from a mixture of pork, chili peppers, garlic and other spices. If you have trouble finding chorizo, give John a call at the Inn. He'll be happy to order you a pound. You must give him a week's notice at least.
If you want to give chorizo a try, but you're not ready to add it to your Thanksgiving stuffing, order it next time you visit the Franklin Inn. If you're joining us for lunch order a chorizo sandwich. At dinner you'll find it on the menu as an appetizer or crumbled into chile con queso. As an entree you can order Chorizo and Eggs or a Chorizo Burrito. We use an exclusive chorizo made especially for us.
What about the left overs?
Forget the boring left over turkey sandwich! Make a quesadilla or enchiladas using turkey in place of chicken.
